Feeling the need for change in lifestyle, Tim left his corporate job in 2012 and reclaimed his family's 8 acre farm from big agriculture in Prairie View, Illinois. Teaching himself a new career, he took land that had been stripped of nutrients from corn and soy rotations and revitalized it using sustainable practices with an eye towards providing the Chicago culinary scene with a wide array of staple Midwestern ingredients. You will now find his produce, eggs, and honey in some of the best restaurants in the country.
In 2017 Tim's older brother Joe opened his first solo restaurant as the Executive Chef and Owner of Daisies in the Logan Square neighborhood of Chicago. Daisies works hand in hand with the farm to provide guests with produce whose provenance is in family hands from seed to table, developing recipes and working with fresh products from within 30 miles of the restaurant. This tight working relationship allows Daisies to highlight the best produce available in a thoughtfully crafted menu that changes naturally with the seasons, and which is truly rooted in its Midwestern home.
